That's because displayed video resolution doesn't necessarily match render resolution. As you might know, most Youtube videos are sagged with tons of visual artifacts due to the extensive compression they use; obviously, 480p does NOT reach anywhere near the maximum of 9.8mbps that DVD-quality video can reach.
Hence, while the game's resolution caps at 720x480, you may want to save it as a higher-resolution compressed video, to ensure that you don't blur it up with compression artifacts. If you look, you might notice that the "720p HD" version doesn't use the full resolution, but looks more crisp. Similarly, I recall seeing some 1080p YouTube videos of Xbox 360 games that only reach 720p on the console, yet look better than the 720p versions for the exact same reason.
