What is the most universally compatible image and text format type?

So I need to find out what is the most universal image and text type that can be opened and viewed by most all programs, especially email software. I need to research this for work so any help would be appreciated. We are most concerned with our Asian clients being able to see our email signatures but we have noticed that in some of the email replies we receive, our email signatures just look like a series of code. We are revamping our email signature so we need to know that it will be viewed properly on most all email software programs.

Images... GIF, they were made for the internet, all browsers can open them (but limited to 256 colors).

Text.... TXT files, of course. You could use HTML or Rich Text, but then no certainty of readability on the other end.
