how to connect a bluray home theater with epson projector and cable box?

i have an Epson projector that i'd like to use as my tv against my white wall. I have a cable box and an All in One BluRay player with wired speakers that I'd love to connect with the Epson.

I have Monster Cables, Digital Optical Audio, and HDMI as well as the ol' RCA cables. The Epson only allows for HDMI and the Digital Optical. The BluRay and Cable Box allow for HDMI, Digital Optical, RCA and Monster Cables. Please help!

Not enough info. Does the Epson have 2 hdmi inputs? What inputs and outputs does the all in one have? Model number of the projector and all in one would help.
