Here is my Setup:
CPU: AMD Athlon 5350 APU
Motherboard: MSI AM1I AM1 2 x SATA 6Gb/s USB 3.0 HDMI Mini ITX AMD
RAM: 1x 8GB
OS: Windows 8.1

TV: Panasonic TH-PZ700u
Receiver: Yamaha RX-V573 7.1-Channel

(Connected VIA HDMI Motherboard to Receiver)

I am not certain whether or not I am receiving 7.1 audio through my setup. The motherboard and receiver are both 7.1 capable. However when I point my mouse over the volume icon on my task-bar, it shows my Panasonic TV instead of my receiver. When I right click the volume icon and select playback device the only available selection is my TV. I select Configure and test my setup, I get sound from all speakers.

I remember when I set up my PC the volume icon on my taskbar displayed by receiver, but now it displays my TV as the audio device. My question is how do I set my Receiver to be the main audio device if it is not so already?

If you are getting all the channels to play on test then it should be working. The receiver will indicate on the front display if it is getting 5.1 or 7.1 input. If your playback stream or file is not digital surround then select a different surround mode to get the speakers to play.
