Simple iphone restore questions

Hi, I have a Iphone 4s that I need to restore. It is jailbroken (just tweaks, nothing illegal). The things I need to keep are: Messages, Notes, Contacts, and Music. It is currently on IOS 5.01, and I would rather keep it below IOS 7 if possible. I do not have Itunes on my pc, I use a mix of copytrans/ifunbox. What is the easiest way to do this? Thanks

You need itunes. Download it and back it up. You have to update to ios 7 because apple signed it off. You can jailbreak it too if you want using evasion7.
