I just purchased a LG 43UJ6300 TV and I want to output the sound to an old analog 2 channel Sony amplifier. This TV only has a toslink optical out, so I purchased a PROZOR DAC to convert the optical signal to analog. This does work, but I lost the ability to adjust the TV’s volume via its remote.

Is there a solution to keep the TV remote volume control using an analog amplifier?

That's the way it is designed to work - optical and line out do not depend on TV own volume. Learning "Universal remote control" could work for you.

Isn't an Xfinity remote a "universal" remote? How does it pair to an amp?

You have to check with Xfinity - they may have a code for your amp. There are really "universal" remotes likes the ones made by Logitech where they have a database of thousands of products, and some of them can even be taught of your existing remote.
